Pros: Great value, Compact, Built in Wi-Fi, Reliability, Video selection, Easy to set up, High quality picture, Easy to use

Best Uses: Primary TV, Secondary TV, Living room

Describe Yourself: Home entertainment enthusiast, Netflix fan, Power User, Movie buff

We use it mainly in our living room, but it is SO easy to use that we can just unplug and move downstairs in our "men's den". We honestly have had so much fun just playing Angry Birds...but we also watch Netflix daily as well as Crackle and Amazon. There are just TOO many things that you can do I can't imagine anyone not loving it!

Bless me Father, It's been 9 months since my last Blog...

Well...2011 has been a fast one.  I can't believe that Summer is over and that Gabe is TWO!  He is a complete mess and keeps me ever so busy.


I have recently started taking classes at Samford for Photography and I am enjoying them more than I can express.  This 1st class "Theme Photography" has really pushed me to think outside my comfort zone.  My next class will be "Portraits with Pizzazz" followed by "Intermediate Photography" and then "Basic Studio Lighting".  I am looking forward to each of these classes and am so grateful that my parents are helping me with the cost as well as watch Gabe each week for class.  I know I couldn't do it without them.  Here is a link to my Class Work.  http://www.flickr.com/photos/visualartsbyjessica/sets/72157627419095371/

I am still doing photo shoots and working to expand my business, but this Summer has been SO hot it has definitely effected bookings.  I am really looking forward to the Fall because I already have so many people wanting to book!  Here is the link to my website just in case you are interested in booking.  https://sites.google.com/site/visualartsbyjessica/

I am still working part-time for Kim as her Assistant and things have been picking up.  She just made Honor Society which means she has 50 consultants working for her Unit.  She is really going to make an impact in a very short time and I am so glad that I get to be apart of it.

Gabe just started back to Mother's Day Out and is going Monday, Wednesday, and Friday for five hours each day.  He is going to a different school than last year since his old school didn't have three day's available for his age group.  With my workload I really needed that extra day and 7 extra hours a week....it really adds up.

We will be celebrating Gabe's 2nd Birthday on Sunday, September 11th at 1pm - 3pm at our House.  Our Theme is the Terrible Two's and I really think we are going to have a blast...I can't wait!

Copy Cat PF Chang's Lettuce Wraps...really yummy!

The girls and I have made this a few times and it is always delish!  We have tried other copy cat recipes, but this is the best.
PF Chang's Lettuce Wraps – Serves 4

Ingredients:
  • 4 tablespoons oil
  • 2 2/3 boneless skinless chicken breasts
  • 1 1/3 cups water chestnut
  • 1 cup mushroom
  • 4 tablespoons chopped onions
  • 1 1/3 teaspoons minced garlic
  • 5 1/3-6 2/3 leaves iceberg lettuce

Special Sauce

  • 1 1/3 tablespoons hot mustard
  • 2 2/3 teaspoons water
  • 1 1/3-2 2/3 teaspoons garlic and red chile paste

Stir Fry Sauce

Directions:

Prep Time: 10 min, Total Time: 25 min
  1. Make the special sauce by dissolving the sugar in water in a small bowl.
  2. Add soy sauce, rice wine vinegar, ketchup, and lemon juice and sesame oil.
  3. Mix well and refrigerate this sauce until you're ready to serve.
  4. Combine the hot water with the hot mustard and Chile paste and set this aside.
  5. Bring oil to high heat in a wok or large frying pan.
  6. Sauté chicken breasts for 4 to 5 minutes per side or done.
  7. Remove chicken from the pan and cool.
  8. Keep oil in the pan, keep hot.
  9. As chicken cools mince water chestnuts and mushrooms to about the size of small peas.
  10. Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
  11. When chicken is cool, mince it as the mushrooms and water chestnuts are.
  12. With the pan still on high heat, add another Tbsp of vegetable oil.
  13. Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.
  14. Add the stir fry sauce to the pan and sauté the mixture for a couple minutes.
  15. Lastly add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps then serve it in the lettuce cups.
